When is Spicy Vodka Pasta served?
Spicy Vodka Pasta is a great dish to eat at lunch or dinner. If you have family or friends coming, this dish is also great because it’s quick and a lot crowd-pleasing.
To add a little splash to the dish, you can even incorporate more protein. It is usually served with chicken or shrimp.
A good bottle of Italian wine, preferably Chianti Classico or Chianti Riserva, will also go well with the dish.
What ingredients do you need?
- ¼ cup olive oil
- 1 small garlic clove, diced
- ¼ cup ketchup
- ½ cup of heavy cream
- 1 tablespoon vodka
- 1 teaspoon red chili
- 225 grams of pasta
- 1 tablespoon butter
- ¼ cup parmesan cheese
- Basil, chopped, to serve
- Salt and pepper to taste
How do you do it?
In a large saucepan, heat the olive oil, garlic, and onion. Cook until soft. Add the tomato paste and cook until it is darker in color and slightly caramelized.
Add thick cream. Add vodka and cook until evaporated.
Add the shredded red pepper. If you like your noodles extra spicy, just add more!
Continue stirring until combined. Season with salt and pepper. Remove sauce from heat.
Cook pasta separately. Gigi using shell but Orecchiette will also work fine. When the noodles are done, save ¼ of the water in the noodles before draining.
Add butter. Stir over medium heat until butter melts and sauce thickens.
Add pasta – and pasta water – to the sauce. Add parmesan cheese and stir well. Add salt and pepper to taste.
Topped with Parmesan cheese and basil to serve.
