Vegetable casserole recipe for weight loss
First, carefully wash 1 whole broccoli and cut it into smaller pieces. Then put it in a pot of boiling water and add some salt. Cook for about 1 to 2 minutes, then drain and place in a clean bowl.
Next are zucchini. Wash two medium-sized zucchini and cut them into smaller pieces with the peel on. Put them in a little hot oil in a pan and fry them on all sides over medium heat until golden brown.
In another pan, fry 1 to 2 finely chopped onions in a little olive oil for 5 to 7 minutes until translucent. Then add 2 cleaned, sliced carrots and fry for another 3 to 5 minutes.
Prepare a baking dish
At this moment, wipe the bottom and walls of a baking dish or a deep baking dish or baking dish with olive oil and distribute the prepared vegetables so that 1/3 of the broccoli, another 1/3 of the carrots and onions and the last third of them What’s left is the fried zucchini.
Delicious topping for baking
Pour 400g of Greek yogurt into a bowl and add a fresh, crushed garlic clove. Then add a sprig of freshly chopped parsley and mix all the ingredients well. Then pour this dressing over the vegetables in the baking dish.

Now cut 10 to 12 cherry tomatoes and 100 g feta cheese into pieces and distribute them over the vegetables with the dressing. Now place the casserole with all the ingredients in the preheated oven at 200 degrees Celsius and bake for about 20 minutes.
Dressing for serving
Meanwhile, place 3 tablespoons of Greek white yogurt in a small bowl, add 1 tablespoon of coarse mustard and a sprig of chopped parsley. Mix correctly and a perfect and dietary sauce will be ready in no time!
