Minced Beef with Fried Egg – CBS Pittsburgh

Minced beef with fried egg


– 1 large potato, diced
– 1 large sweet potato, diced
– Extra Virgin Olive Oil from Greece
– Sea salt and ground black pepper to taste
– 1 large sweet onion, diced
– 3 garlic cloves, minced
– 2 cups beef, diced
– 1 tablespoon steak seasoning
– 2 to 3 dashes Worcestershire Sauce

– 2 tablespoons unsalted butter
– 4 large eggs

– Frank’s Hot Sauce, to serve
– Whole fresh parsley leaves, for garnish


Preheat oven to 425 degrees.

Coat the diced zucchini and sweet potatoes with just enough olive oil to coat the potatoes, season with a little sea salt and pepper to taste. Place on a parchment-lined baking sheet and bake until golden and crisp for 20 to 25 minutes.

Heat enough olive oil in a large saucepan over medium heat until the onions and garlic are cooked. Add the onion to the pan and cook until the onion is translucent and begins to turn golden, 4 to 5 minutes. Add the garlic and cook for another minute, being careful not to burn the garlic. Add beef, potatoes, and steak seasoning. Cook for a few more minutes to heat up the beef. Add Worcestershire sauce and stir. Check the seasoning.

Put 2 tablespoons unsalted butter in a non-stick pan and fry the eggs, season with salt and pepper. About a minute into the egg cooking, add about 1 tablespoon of water and cover the lid to continue cooking the eggs without overcooking. You want the egg yolks to be non-watery, so this shouldn’t take long.

Top the skillet with minced beef with fried egg, hot sauce and parsley leaves.

Serve: 2-4

For eggs:

Heat butter over medium heat in a large non-stick skillet. Carefully crack the eggs into the melted butter, being careful not to break the yolks.

Fry the eggs for about a minute, then add about 1 tablespoon of water and cover immediately. Cook just long enough to cook the eggs until the whites thicken but keep the yolks.
